Truffle & Pecorino Powder

• Ingredients: Rice flour, pecorino cheese powder 15%, potato starch,  dried summer truffle 5%.

Pecorino and Truffle Risotto:

1. Prepare a light vegetable broth and keep it warm.
2. In a large skillet, sauté a finely chopped onion with a drizzle of extra virgin olive oil until transparent.
3. Add the rice and toast it for a couple of minutes.
4. Begin adding the hot broth, one ladleful at a time, letting the rice absorb the liquid before adding more.
5. When the rice is almost cooked, incorporate a generous amount of Pecorino and Truffle Powder, stirring well to blend the ingredients.
6. Toss the risotto with a knob of butter and serve immediately, garnishing with additional pecorino flakes if desired.
